Non molto tempo fa ho avuto modo di fare conoscenza con la Lochan Tea Limited produttrice di tè certificati e artigianali in India.

Per loro gentile concessione mi sono stati inviati 27 campioni da degustare e per i quali realizzerò una recensione di ognuno, in fondo degustare tè da ogni parte del mondo fa parte di ciò che sono e faccio ogni giorno ormai da due anni a questa parte divulgando la cultura del tè e collaborando con diverse realtà oltre che per piacere personale.

Chissà se un giorno riuscirò a visitare questo Tea Garden.

Oggi ho assaggiato un tè nero aromatizzato al fiore di Ibisco e il profumo è davvero fresco e inebriante.

Ciò che mi ha colpito di questo blend è che le foglie del tè sono arrotolate a mano e i fiori interi di Ibisco che lo aromatizzano ne confermano l’artigianalità dando all’infuso un bellissimo colore viola.

Non si usano solitamente tè costosi per le miscele, ma comunque di buona qualità, purché siano ben bilanciati e non abbiano un carattere predominante sugli altri. Gli aromi che posso essere frutta, spezie e fiori essiccati, ma anche oli essenziali, devono adattarsi al tè di base.

Il Tea Blender è colui che crea i blends che vengono miscelati in tamburi di miscelazione, ed è suo compito testare che la miscela sia perfettamente bilanciata in aroma, corpo e gusto.

Tipologia: tè nero indiano aromatizzato artigianale biologico.
Provenienza: Doke Tea Estate.
Proprietà: rinvigorente.
Foglie a secco: scure e arrotolate con fiori di Ibisco.
Foglie dopo infusione: scure poco più ampie con fiori di ibisco interi.
Aroma: note fiorite e fruttate.
Colore del liquore: rosso-viola limpido.
Gusto: zero astringenza in equlibrio con il tè nero di base per nulla amaro. Dolce, floreale, poco intenso. Note di ibisco, ribes, ciliegia e fondo legnoso.
Preparazione: unica infusione 2,5-3 gr di foglie ogni 200 ml in 95-98 gradi di acqua PH 6.8 per 4 minuti.
Teiera ideale: teiera tradizionale in porcellana.
Abbinamenti: con dolcetti e stuzzichini salati per la colazione o una pausa pomeridiana.
Aggiunte: nessuna.

Doke Pink Infusion Tasting

Not long ago I got to know Lochan Tea Limited, a certified and handcrafted tea producer in India.

With their kind permission, I have been sent 27 samples to taste and for which I will make a review of each one, after all, tasting tea from all over the world is part of what I am and I have been doing every day for two years now, disseminating the tea culture and collaborating with different realities as well as for personal pleasure.

Who knows if one day I will be able to visit this Tea Garden.

Today I tasted a black tea flavored with hibiscus flower and the scent is really fresh and intoxicating.

What struck me about this blend is that the tea leaves are rolled by hand and the whole hibiscus flowers that flavor it confirm its craftsmanship, giving the infusion a beautiful purple color.

Expensive teas are not usually used for the blends, but in any case of good quality, as long as they are well balanced and do not have a predominant character over the others. The aromas that can be fruit, spices and dried flowers, but also essential oils, must adapt to the base tea.

The Tea Blender is the one who creates the blends that are mixed in mixing drums, and it is his job to test that the blend is perfectly balanced in aroma, body and taste.

TASTING CARD

Type: artisanal flavored Indian black tea organic.

Properties: invigorating.
Dry leaves: dark and rolled with hibiscus flowers.
Leaves after infusion: slightly wider darker with hibiscus flowers.
Bouquet: floral and sweet notes.
Liquor color: clean red-purple.
Taste: zero astringency in balance with the basic black tea that is not bitter at all. Sweet, floral, not very intense. Notes of hibiscus, currant, cherry and woody base.
Preparation: single infusion 2,5-3 grams of leaves every 200 ml in 95-98 degrees of water PH 6.8 for about 4 minutes.
Ideal teapot: traditional porcelain teapot.
Pairings: sweets and sandwiches for breakfast or in the afternoon.
Additions: none.
